I am convinced that a home-made ice cream will always prove the most popular dessert (with gooey chocolate cakes coming a close second!) This is a richly flavoured, nutty ice cream, perfect for winter.

Ingredients

  • 2 oz (50 g) walnut pieces
  • coarsely grated rind and juice of 2 large

Method

Put the walnut pieces into a little water in a saucepan, boil for about 10 minutes and drain. (This will make the nuts moist.)

Put the eggs into a bowl with the salt and whisk with an electric whisk until pale and frothy. Put the demerara sugar into a saucepan and add the orange juice and water. Dissolve the sugar, stirring over a low heat. Add the grated orange rind, bring to the boil
