Ingredients: 5 oz (150 g) granulated sugar; 5 tablespoons (5 x 15 ml spoon) water; ½ pint (300 ml) whipping cream; 4 oz (100 g) plain chocolate, broken into small pieces; 6 tablespoons (6 x 15 ml spoon) dark rum; the whites of 2 eggs; ½ teaspoon (2.5 ml spoon) salt; 4 oz (100 g) granulated sugar; 3 tablespoons (3 x 15 ml spoon) dark rum; a pinch of salt; butter, for greasing; 1 oz (25 g) cocoa; 5 tablespoons (5 x 15 ml spoon) strong coffee; finely grated rind of 1 and juice of 2 oranges; 4 oz (100 g) ground almonds; 4 oz (100 g) icing sugar, sifted; 3 medium to large eggs (size 2–3)

This wonderful treat for a special occasion is a beautiful swirl of rum and chocolate ice cream on an almond chocolate sponge which is soaked in orange juice and rum. I have a friend who is astonishingly disciplined about never eating sweet or creamy foods. For years I have tried to tempt her with my puddings. At the sight of this one her will finally broke: she had not one but two large helpings!
