Ingredients: ½ pint (300 ml) double or whipping cream; 5 fl oz (150 ml) hot water; 2 oz (50 g) caster sugar; 1 teaspoon (5 ml spoon) instant coffee; 6 tablespoons (6 x 15 ml spoon) water; 6 oz (175 g) caster sugar; juice of 1 lemon; the yolks of 3 large eggs (size 1–2); 4 oz (100 g) plain chocolate, broken up roughly; ½ teaspoon (2.5 ml spoon) salt; the whites of 3 large eggs (size 1–2)

This is a frothy, soft, white ice with a lemony tang, which is streaked with dark chocolate. It is quite quickly made and is irresistible for any occasion, from a family lunch to a sophisticated dinner party.

Method

To make the chocolate, put the hot water into a bowl set over a saucepan of very hot, but not boiling, water. Add the instant coffee and caster sugar, stir, and then add the chocolate. Stir the mixture in the bowl until completely smooth. Add the egg yolks one at a time. Continue stirring over the hot water for about 5 minutes. Then put the bowl on one side to cool.
