A refreshing, tangy fruit mousse with a beautifully marbled appearance, made in and then turned out of a pudding basin – hence the title ‘mountain’. It can be made from any fruit purée which has a definite colour. I particularly like the intense flavour and colour of blackcurrants or damson plums, but you could use a purée of strawberries, or of redcurrants, raspberries, red plums or dried apricots.
