This is not a jelly for a children’s tea party. It is made from the three ingredients which epitomise a journey through Greece or Turkey: yogurt, honey and ouzo, the potent, aniseed-flavoured drink which turns white when you add water to it. Here they combine subtly to make a translucent white jelly which everyone seems to love. If you can’t get ouzo the French Pernod or Ricard or the Turkish raki are all similar.
