Tamarind is a tropical fruit that originated in Africa, made its way along the spice route to India and the Middle East, and eventually wound up in the southern half of the Western Hemisphere. In Trinidad, it is the basis for many sweets and for this drink.

Ingredients

  • 2 tablespoons tamarind pulp
  • ¼ cup sugar, or to taste

Method

  1. Place the tamarind pulp in a pot with 4 cups of water and bring to a boil. Lower the heat and simmer for 25 minutes.
  2. Remove the pot from the heat and pour the liquid through a strainer, pressing with the back of a spoon to extract all the liquid.
  3. Mix in the sugar, adjusting the quantity to taste. Mix well and cool completely. Serve over ice.
