The unusually named Lamingtons are scrumptious squares of butter sponge coated in chocolate sauce and dipped in desiccated coconut, giving them a unique texture and look. Sometimes with a filling of cream, lemon curd, or strawberry jam, they are one of our top ten bestsellers at Bea’s and, even though we make at least two hundred per day, we still never make enough to please our customers.
