People often confuse Danish butter cookies with shortbread because they are so similar, but shortbread has a far crumblier consistency than the all-butter, melt-in-your-mouth Danish version, which adds eggs to make them softer. Either way, these cookies are simple delights that need no adornment.
Danish butter cookies, known as sablés in France (a word that means “sandy” in reference to their texture), use similar amounts of butter to shortbread but add more sugar and flour.
