Florentines were originally made for Queen Catherine de’ Medici of France by pastry chefs at the Palace of Versailles. They are delicate, lace-like cookies with caramel undertones and a chocolatey finish, and when they come out of a warm oven they are pliable enough to roll around a tube before they cool and dry into a crisp but chewy cylinder of deliciousness with a drizzled coating of melted dark chocolate. You can even fill them with buttercream for added richness if you like.
