In Palermo, the capital of the Italian island of Sicily, the fried tubes of pastry known as cannoli were historically called cappeli de Turchi or Turkish hats—a nod to the ancient Arab Saracens who brought sugar to Italy and turned what was already a tasty treat into something truly sweet.
