Walnuts and maple syrup are wonderful together, though if you prefer a creamy maple candy with no nuts, you can omit them. These candies have a soft, chewy consistency, and are particularly popular in the US, where maple syrup is a much-loved ingredient in muffins and drizzled over pancakes.

Ingredients

  • 400 g/14 oz/2 cups granulated (white) sugar

Method

  1. Place about 25 mini cake or sweet cases on a baking sheet. Alternatively, grease a 20cm/8in square cake tin (pan) and line it with baking parchment.
  2. Combine the sugar, maple syrup, cream and water in a heavy pan. Split the vanilla pod and scrape the seeds into the pan. Add the pod, too. Place over a medium heat and stir until the sugar has dissolved.
