In the southern states of the US, divinity is a very common treat. It is often made with pecans, but the soft texture of fresh walnuts is delicious with this meringue-like confection. Since the recipe includes fresh walnuts, they are best eaten immediately. The optional addition of chopped dried apricots adds a contrast in flavour and a little colour, making these a decadent autumnal treat.
