In countless mountain restaurants, gondola stations and lakeside kiosks you’ll And Bärli-Biber, a small, marzipan-stuffed gingerbread with an Appenzeller scene on the package. These treats, also known as Biberli and made by the Appenzeller company Bischofsberger, are a smaller version of the canton’s large gingerbread Biber.
Today the Biberli are beloved snacks, pulled out of backpacks in the middle of a hike, or from beach bags beside the lake.
