These hearty, crunchy cookies are a classic from my husband Sam’s childhood. Although I occasionally opt not to ice them, in Sam’s mind this is a cardinal sin and the slight tang of lemon glaze is essential.
Cream together the butter and sugar until pale and fluffy. Beat in the salt.
In a separate bowl, sift together the flour, cocoa powder, and baking powder. Stir in the oats.
Stir half of the flour mixture into the butter mixture, stir in the milk, then stir in the rest of the flour mixture.
Form into a disc, wrap, and chill in the fridge for at least an hour or until firm
