This versatile dough (I’m calling it Guetzliteig) can be used as a base for many different cookies, including the classic jam filled Pfaffenhüetli and Vogelnestli (see the following pages), plus chocolate, vanilla or marbled cut-outs. You can split it in half and use it for two different recipes, and it freezes wonderfully as well.
