During the late 1800s absinthe became the drink of choice for the bohemians in Paris, and the likes of Baudelaire, Toulouse-Lautrec, Zola, and Gauguin imbibed the spirit, known as the ‘green fairy’.

Generally, I like drinking absinthe alone with a swirl of cold water while pretending to be a French bohemian, but its strong anise taste lends itself well to cooking and baking, especially in these buttery cookies.
