Moreton Bay bugs and Balmain bugs are very similar. Guillaume Brahimi uses Moreton Bay bugs in this recipe, but you could use either. They combine deliciously with the chermoula, a slightly spicy North African herb paste, and moghrabieh (sometimes called pearl or Israeli couscous), which is larger than regular couscous, like small balls of pasta.
