Rinse the beans well in running water and discard any skins. Put the beans in a heavy-based saucepan with the bouquet garni and cover with water. It should cover the beans by about an inch. Heat to boiling, boil for 5 minutes, reduce the heat and simmer very gently, tightly covered, for about 3 hours or until the beans are tender but not mushy. Pass through a sieve or purée in an electric blend
