Giant orange pumpkins, called, perhaps misleadingly for a foreigner, ‘courges’ in Provence, are a speciality in the Lucéram region. They’re used as pizza topping when tomatoes are not in season, and in soups to make a French version of minestrone, or this creamy-sweet orange bisque. Both soups are particularly good served in the scooped-out shell of the pumpkin.
