In Spring Haute Provence is covered in fruit tree blossoms. And when the blossoms fall, the lavender begins - miles of purple, striped with bleached earth. People in Provence have always made nougat & sweetened cheese with honey form these lavender fields, but to use it in meat & poultry dishes is a recent development; surprisingly, considering Provence’s long Arab history.
