  • 18 oz/500 g firm ripe tomatoes, peeled & seeded
  • grated zest (but no white pith) of 1


Prepare sauce at least 12 hours before: crush tomatoes with a fork, & beat in the lemon zest, herbs, coriander, garlic & olive oil. Season well with salt and pepper. Do not refrigerate. To make the stuffing, cook the courgettes in 2 tbsp/30
