Don’t be put off by the quantity of salt and vinegar specified in this tart tomato salad, but do drain the tomatoes well after marinating. And, as in all dishes where olive oil is an important seasoning, use the best you can afford - a little goes a long way.

Ingredients

  • 4 large or 6-8 smaller juicy tomatoes, each cut in 8
  • 1 tbsp/15 ml

Method

Place the tomatoes in a bowl and mix well with the salt, pepper, vinegar, orange juice and 2 tbsp/30 ml olive oil. Leave in a cool place for 2-3 hours. Just before serving remove the tomatoes, drain ver
