This sweet omelette has a rich, melting texture and the tang of fresh mint. It is an ideal way of using the mild and creamy Corsican goat (and ewe) cheese Broccio, or the stronger tasting Brin d’Amour with its covering of wild herbs that smell of mint and new-mown hay.

Ingredients

  • ½ oz/15 g unsalted butter
  • 3 fresh mint leaves, cut in thin strips
