The glacé fruit from Apt is now more commercialized than in Monsieur Pin’s day, and not so precious as that from Nice’s Auer shop. It is better used to decorate baked goods, as in this moist fruit cake from the lovely Lubéron town of Ménerbes.


  • 7 oz/200 g Muscat grapes or black cherries (stoned/pited)
