Terraïeto are tiny terracotta pots, almost as small as doll house in china, into which are pressed a collection of different country pâtés: thrush, chicken liver, wild hare or rabbit.

Ingredients

  • 2 garlic cloves, crushed
  • 1 onion, finely chopped
  • olive oil
  • 2 rabb

Method

Preheat oven to 375°F/190°C/gas 5. Cook garlic & onions in olive oil until soft. Add liver & kidney & continue cooking for 3 mins. Chop finely & mix with other ingredients. Press into several small ovenproof dishes &
