Terraieto

Little Country Pâtes

Terraïeto are tiny terracotta pots, almost as small as doll house in china, into which are pressed a collection of different country pâtés: thrush, chicken liver, wild hare or rabbit.

Ingredients

  • 2 garlic cloves, crushed
  • 1 onion, finely chopped
  • olive oil
  • 2 rabbit livers (or 12 chicken)
  • 2 lamb’s kidneys
  • 1 tbsp/151 ml each of chopped parsley & thyme
  • 3 eggs, beaten
  • salt & black pepper
  • 9 fl oz/250 ml tomato coulis
  • 1 Slice of bread, soaked in bouillon
  • small glass eau de vie

Method

Preheat oven to 375°F/190°C/gas 5. Cook garlic & onions in olive oil until soft. Add liver & kidney & continue cooking for 3 mins. Chop finely & mix with other ingredients. Press into several small ovenproof dishes & cook for 45 minutes. Serve warm or cool.
