This custard, with its pleasing layers of green courgettes/zucchini & red tomatoes, is very good, with roasts & poultry.

Ingredients

  • 2 courgettes/zucchini, cut in ¼ in/5 mm slices crosswise
  • 2 eggs & 2 eggs yolks

Method

Preheat oven to 350°F/180°C/gas 4 & blanch courgettes. Beat together eggs, tomato coulis, cream, tarragon, salt & pepper. Grease 4 small metal cocottes & into them layer courgettes & tomatoes (alternately). Divide the beaten egg mixture between the four dishes & pla
