In the Drôme district north of Séguret ‘panades’ are made at Christmas with a variety of fillings, replacing the pompe a l’huile common to Marseilles. The following ingredients may be substituted for the grated apples in the above recipe (but traditional panade should always have a lattice top):


  • equal parts grated apples and pears
  • thinly sliced apples with 3-4 spoonfuls of melted lavende
