Carlos Abellan serves this tapa in a porcelain dish specially designed for such cubes, but the food’s so stylish it would look good on almost anything. Make sure the tuna is ultra-fresh, as this is the heart of the dish. For an even more intense flavour, lightly sprinkle some powdered ginger or some grated fresh ginger over the cubes.
