The classic marriage of ham and cheese is made more interesting by the texture and subtle flavour of the asparagus. Riojans love tinned asparagus spears so, for authenticity’s sake, you needn’t worry about finding the fresh variety - but use it if you prefer the extra crunch. This is one of Logroño’s rare tapas that needs a knife and fork.
