This is a flavoursome twist on the classic Spanish potato tortilla, and should be served at room temperature.

Ingredients

  • 50 g ( oz) tender young garlic, minced
  • olive oil for frying

Method

  1. In a medium-sized frying pan, sauté the garlic in a little olive oil until tender and golden. Add the beans and ham strips and stir to mix.
  2. Add the eggs and seasoning and cook for 3-4 minutes, to form a firm but juicy omelette. Cool to room temperature, cut into triangular slices or squares and serve.
