This is an exquisite, though rich, nueva cocina tapa. The hot goat’s cheese is a delicious match for the cold caramelised onions. The honey should not be too highly flavoured, as this would drown the more subtle cheese, and it must be liquid so that it drizzles easily. The parsley is optional, but adds a splash of colour to this minimalist plate.
