Easy to make yet oozing with flavour, this Mallorcan tapa is a real hit in Valencia, Make sure the squid you use is small and tender.

Ingredients

  • 100 ml ( fl oz) olive oil

Method

  1. Heat the olive oil in a large saucepan. Add the squid and stir-fry for 1 minute. Add the onion and tomatoes and fry for 5 more minutes.
  2. Add the garlic, pepper, bay leaf, red wine and stock, stir and then simmer for 20 minutes. Serve hot in earthenware dishes, with crusty bread.
