Casablanca’s hallmark tapa of seasoned mash is generously bathed in virgin olive oil from Baena - rated as Andalucía’s premier oil. Don’t worry if you can’t get hold of this oil, but do use the best you can find. Typically for Manuel, this is a delicious tapa created from the simplest ingredients.
