Using water melon as a savoury salad is unusual and decorative and it goes well with ham or other cold meats.
Peel, thinly slice and remove the pips from the water melon. Slice the onion in very thin rings and mix with the water melon slices in a fairly deep salad bowl. Cover with a plate and leave for half an hour. Mix up a dressing of lemon juice and twice as much olive oil well seasoned with salt and black pepper. Pour this over the melon and onion, sprinkle with paprika and serve.
