Salads made from dried beans soaked overnight and then boiled mixed up with chopped raw onions are very delicious but they need some forethought. If you are in a rush you could always keep some tins of beans in your cupboard to make this useful salad. You can use either raw red cabbage or raw onion.

Ingredients

  • 1 large tin broad beans
  • 1 small red cabbage
  • 1 tin white haricot beans (available fr

Method

Take off the outer leaves of the red cabbage and chop into fine small pieces. Put into a salad bowl with the drained tinned beans. Toss with a strongly seasoned oil and vinegar dressing.
