Tropical Fruit Salad

This is wonderfully quick to make. It tastes delicious, scented and unusual and it looks lovely. If you can get any of the fruit fresh all the better, but you will need to add sugar. Most large supermarkets sell tinned exotic fruit in their delicatessen section.

Ingredients

  • 1 large tin lychees
  • 1 tin guavas
  • 1 large tin blackberries or blackcurrants or black cherries
  • 1 tin passion fruit (if available)
  • lemon juice
  • white rum or Kirsch
  • 1–3 tablespoons flower or rose water

Method

Just empty all the tins into a serving bowl and add the juice of ½ to 1 lemon. Add white rum or Kirsch to taste. A little rose or flower water goes very well with the scented taste of the tropical fruit. You can also make this into a tropical jelly by adding 1 oz dissolved gelatine (25 g) to the fruit and juice mixture.
