Cheese Apples

I think that the combination of cream cheese and cream is very good and here the cheese is formed into little mock crab apples which make a pretty pudding.

Ingredients

  • ¾ lb cream cheese (350 g)
  • 2 oz caster sugar (50 g)
  • paprika
  • whole cloves
  • angelica strips
  • 5–8 fl oz (double) cream (150–225 ml)

Method

Mix the cream cheese thoroughly with the caster sugar. Form the mixture into balls about the size of crab apples. Sprinkle them with paprika and stick one clove into each ball. Soften the angelica strips in hot water and cut out of them enough small leaf shapes to give each cheese apple one or two leaves stuck in the opposite end to the clove. Arrange the apples carefully on a pretty dish and chill in the fridge. Serve with cream.
