Cheating Ice Cream with Hot Rum Sauce

This recipe is easy to make and tastes much more elaborate than it is.

Ingredients

  • one packet Bird’s Dream Topping
  • ½ pint whipping cream (275 ml)
  • ½ teaspoon vanilla essence
  • 1 tablespoon soft brown or caster sugar
  • one egg yolk

For the Hot Rum Sauce

  • 2–3 tablespoons black treacle
  • 2 oz butter (50 g)
  • 3 oz plain chocolate (75 g)
  • about 2 dessertspoons dark rum
  • juice of 1 orange

Method

Make up the Dream Topping according to directions. Add vanilla essence and whisk in the sugar and egg yolk Whisk up the whipping cream and fold into the mixture. Put in a container in the freezing compartment of the fridge for at least three hours, or in the freezer for 1–2 hours.

Put all ingredients in a saucepan. Gently heat and stir, until the chocolate has melted and serve with the ice cream.
