We’ve made it to the star of the show. As a Jamaican, I view learning to prepare jerk chicken properly as a rite of passage. Traditionally, jerk chicken is made outdoors over pimento wood, but this is one of the first dishes I learned to perfect in an oven. Oven Jerk Chicken is a pure heaven of flavor and spice.

  • 2 lb chicken leg quarters, washed
  • 1 tablespoon olive oil

Method

Place the chicken in a large bowl or zip-top bag. Add the olive oil, green seasoning, dry jerk seasoning, jerk seasoning, brown sugar, YardSpice, CajunSpice, and salt. Rub the seasonings over the chicken well, ensuring that you get under the skin. I like to poke little slits in the chicken with a knife to ensure deeper marinating. Refrigerate for 24–36 hours.
