Another one of Jamaica’s well-known delicacies is our oxtail. It’s commonly referred to as braised oxtail or oxtail stew—I just call it oxtail, and it’s one of my favorite dishes. Decent cuts of oxtail should be available to purchase at your local butcher.

Ingredients

  • 2 lb oxtail, washed well (see tip)
  • 2 tablespoons dark soy sauce

Method

Place the oxtail in a large bowl. Season with the soy sauce, green seasoning, WhiteSpice, YardSpice, adobo seasoning, ½ tablespoon of salt, and the pepper.

Add the garlic, 2 sprigs of thyme, the allspice, green onions, yellow onion, and Scotch bonnet (if using). Using gloved hands (Scotch bonnets are extremely hot), mix well until every piece of the oxtail is well coated. Cover tightly
