I put this sh*t on everything! I’m aware that I may have a special obsession with sun-dried tomatoes, but this aioli is truly delicious. Sun-dried tomatoes have a naturally unique flavor that balances both tart and sweet. Try this aioli as a dip with fresh vegetables or crispy French fries.
In a blender, combine the sun-dried tomatoes, garlic, basil, lemon juice, and water and blend until smooth.
Add the mayonnaise to a medium bowl and pour in the sun-dried tomato mixture. Top with the sugar (this balances the acidity) and mix well until the sugar is dissolved and all ingredients are smoothly combined.
Store in an airtight container in the refrigerator for 2–3 days
