Samgyupsal is a phenomenally popular pork dish in Korea, and a firm favourite when out socializing, enjoyed with a glass of soju. Thinly sliced pork belly is griddled until the outside is crisp, leaving a smooth texture at the centre. The meat is then immersed in a salty sesame dip, before being wrapped in lettuce leaves with a spoonful of red chilli paste to round off the combination of flavours.
