Fine strips of braised beef are enhanced by a rich, dark soy and garlic sauce, with a piquant kick of root ginger. Muscovado sugar adds an almost imperceptible sweetness, complemented by hot jalapeño chillies. This dish makes an excellent side serving to accompany a larger stew or noodle dish.

  • 450 g/1 lb beef flank

  1. Bring a large pan of water to the boil and add the beef. Cook for around 40 minutes until tender. Drain the meat and rinse it in warm water. Leave the beef to cool, then roughly slice it into strips about 5cm/2in long.
