Instead of a complex marinade, this recipe relies on the taste of high quality sirloin steak. Kneading the meat with salt makes it deliciously tender, and the simple seasoning provides a delicate garlic flavour. Accompanied by a bowl of doenjang soup, the smoky aroma and grilled taste of this dish are without equal.

Ingredients

  • 450 g/1 lb beef sirloin
  • 2 round (butterhead) lettuces

Method

  1. Slice the beef into bitesize strips and place in a bowl. Add the garlic, mushrooms and spring onions. Pour in the mirin or rice wine and add the salt and several twists of black pepper.
  2. Mix the marinade together, evenly coating the beef. Knead the meat well to tenderize. Chill, and leave for at least 2 hours.
  3. Mix the spring onion ingredients together.
