The fresh taste of the courgette in this namul dish mingles with the flavours of sesame oil and a hint of seafood in the form of shrimp. The dried shrimp gives a pleasing crunchiness, which contrasts nicely with the texture of the courgette.


  • 2 courgettes (zucchini), finely sliced
  • 10 ml/2 tsp sesame oil


  1. Place the courgette slices in a colander, lightly sprinkle them with salt and leave to stand for 20 minutes. Drain off any excess liquid and transfer to a bowl.
  2. Add the sesame oil to the courgette slices and mix together to coat.
  3. Coat a frying pan or wok with the vegetable oil and heat over high heat. Add the seasoned courgettes and crushed garlic, an
