For this refreshing, chilled dessert, unique to Korea, crunchy ice flakes are coated with a purée of red beans and maple syrup, and then topped with fresh fruit. This is unquestionably the most popular choice for a hot summer’s day.


  • 80 g/3 oz/½ cup red kidney beans, soaked overnight

  1. Place the red beans in a pan, cover with water and bring to the boil. Boil fast for 10 minutes, then simmer until the beans have softened. Drain and leave to cool, then roll them between the palms of your hands to remove the skins.
