This recipe came about through sheer experimentation. I had been gifted a bunch of beautiful okra and wanted to try something different from the norm of making fried okra. Fritters came to mind. I added some tomatoes, as I have always thought tomatoes and okra go well together. There you have okra and tomato fritters.

Ingredients

  • 3 tablespoons vegetable oil, plus 3 to 4 cups oil for frying
  • 4 cups

Method

In a large skillet heat the 3 tablespoons of oil over medium heat. When oil is hot, add chopped okra and onion and cooked until onion is translucent and okra has color, approximately 8 to 10 minutes.
