  • 1 medium potato, peeled
  • Salt
  • 2 eggs
  • 2 small tomatoes

Method

Cube the potato into 1-inch chunks. Bring a pot of salted water to boil, then add the potato and lower the heat to a simmer. Simmer, covered, until the potato pierces easily with a sharp knife, about 15 minutes. Set aside and let cool. When cool, cut into smaller chunks if desired.
