  • 1 pound lean cut of meat (such as filet mignon, strip, or sirloin


Preheat oven to 450°F. Heat the olive oil in a large Dutch oven or cast-iron pan over high heat. Sprinkle the meat with salt and pepper, add to the pan, and sear 2 minutes on each side, flipping only once. If you prefer the meat served rare, it can be served now or remain on the stove
