  • 4 ounces semisweet or bittersweet chocolate, chopped if in bar form, or chips
  • ¼ cup heavy cream


Place the chocolate in the top of a double boiler, or in a heatproof bowl set over a pot of simmering water (be sure the bottom of the bowl does not touch the water), and heat until half the chocolate is melted. Remove from the heat and stir until the chocolate is completely melted.

Whip the heavy cream with an electric mixer on high speed until soft peaks are formed.
